The dining room was unusually quiet on the eve of the holiday — and the kitchen, freed from its high-season volume, sent out the cleanest course-pacing we've experienced there in months. The Cannelloni was perfect.

Cabbages & Condoms Restaurant Pattaya

Open through the holiday, half-staffed but in good spirits. We sat in the garden, ate larb and a green curry, watched the procession of soaked tourists wander through Pratumnak Soi 4. A reminder that the social-mission-driven kitchens often handle pressure better than the high-end ones.

When the streets are too wet for an evening walk, the hotel buffet earns its keep. Edge's Songkran-week brunch was scaled-back from the high-season version but better-executed for it. The oyster bar was at its peak.

Indian restaurants are reliably open through Songkran — different staff demographics, different holiday calendars. We ate proper biryani at lunch on what would have been the city's quietest day, and the kitchen had room to actually make it well.
