Mexican food in Pattaya has historically been a mixed bag - lots of half-hearted tourist places serving lukewarm fajitas to people who don't know better. La Hacienda has been the exception for over two decades, and its survival in a tough market is the strongest endorsement. Run by an American expat who has lived in Pattaya since the late 1990s and trained kitchens in genuine Tex-Mex and Mexican techniques, the food is calibrated more toward American Tex-Mex (Cal-Mex, specifically) than authentic Mexican regional cooking, but executed with attention. Guacamole is made tableside on order, with fresh avocado, lime, jalapeño, cilantro, and tomato pestled together in a stone molcajete - one of the best guacamoles in the city. Salsas (red, green, smoky chipotle) are house-made and replenished free during the meal. Fajitas come sizzling on cast iron with marinated chicken, beef, or shrimp, plus grilled peppers and onions, served with house-made flour tortillas, sour cream, and pico de gallo. Tacos al pastor have proper achiote-marinated pork shaved off the trompo (rotating spit) when available. Enchiladas come in red, green, or mole sauce - the mole is house-made and uses imported chili peppers. The bar is the real draw for many regulars: 15+ tequilas including high-end añejos and reposados from premium producers (Don Julio 1942, Patrón Reposado, Casamigos), fresh lime margaritas pressed to order with real lime juice (not syrup), and a respectable Mexican beer selection. Margarita pitchers for sharing are popular - a 2-litre pitcher feeds 4-6. The dining room is themed but not cartoonish - Mexican tiles, sombreros (some ironic), Mexican music turned to a reasonable level. Two outdoor patios add capacity in dry season. Service is quick, English-fluent, and friendly. Prices are mid-tier - 600-1200 THB per person for a typical meal with drinks. La Hacienda is not authentic regional Mexican (you won't find proper mole poblano with 30 ingredients here), but it is genuinely good Tex-Mex executed by people who care. For Pattaya, that's a triumph.

The story
La Hacienda opened in 2002, founded by an American expat who had lived in California and Texas before relocating to Thailand in the late 1990s. The kitchen was trained by a Mexican cook brought from California; the bar program has been refined progressively with Mexican spirits and tequila education. Survived multiple market downturns including the 2008 financial crisis, 2014 political instability, and COVID-19 closures.
